feat: utiliser pipeline GStreamer libcamerasrc pour OV5647 sur Pi Bookworm

Remplace cv2.VideoCapture(0) + cam.set() par un pipeline GStreamer
compatible libcamera, nécessaire sur Raspberry Pi OS Bookworm.
